Dr Ekberg’s Swedish Paleo Coleslaw

Dr Ekberg's Swedish Paleo Coleslaw

In Sweden, pizza parlors serve a complementry coleslaw with their pizzas. Similar to Mexican resturants serve free chips and salsa. This receipe is very similar to what you would find in Sweden.

Dairy free, sugar free, gluten free

Ingredients:

  • 1/2 cabbage head
  • 1 garlic clove
  • 6 tablespoons EEVO extra virgin organic olive oil
  • 7 tablespoons white vinegar
  • 2 teaspoons salt
  • 2 packages stevia (Sweden uses 2 teaspoons of sugar, but on a strict diet/cleanse use stevia)
  • 1/2 teaspoon ground pepper
  • 1 teaspoon yellow mustard
  • 1 teaspoon basil &/or oregano &/or Italian seasoning

Directions:

  1. Slice cabbage as thin as possible and place in large bowl
  2. Put all ingredients except oil into a sauce pan 
  3. Bring to boil
  4. Simmer for a few minutes
  5. Remove from heat
  6. Add EEVO to sauce pan
  7. Mix
  8. Pour contents of sauce pan over cabbage
  9. Mix
